Exopolysaccharides from Lactiplantibacillus plantarum: isolation, purification, structure-function relationship, and application

摘要

Lactiplantibacillus plantarum is a type of lactobacilli that can produce a range of exopolysaccharides with diverse structural characteristics and bioactivities. This review provided an overview of the isolation, purification, characterization, and yield optimization of exopolysaccharides from Lactiplantibacillus plantarum. The up to date information regarding structural characterization and bioactivities of these exopolysaccharides were described, and the structure-bioactivity relationship was discussed. Considering synthetic biology is a promising future strategy to produce bioactive compounds, the biosynthetic pathways of exopolysaccharides in Lactiplantibacillus plantarum were reviewed.
